5 Quick and Easy Lunch Ideas When You're Working From Home

Besides breakfast, lunch is necessary to give you the energy for a long afternoon. Spending time to have lunch with flavor and full nutrients is important, even when you're working from home during lockdown. Check out these quick and easy lunch meals that are ready in 10 minutes to get you inspired.

Mermaid Veggie Bowl

Like a poke bowl, the Mermaid Veggie Bowl is a healthy snack or dessert that is easily customizable with whatever chopped veggies you want. 

 

Ingredient:

2 cup frozen pineapple pieces

2 large frozen chopped bananas

1/3 cup So Good™ Almond Milk Unsweetened

2 teaspoons blue spirulina powder

flower shapes Fresh spinach leave

Instructions:

Step 1: Place all ingredients into a blender and blend until thick  and creamy

Step 2: Spoon mixture into bowls and top with fresh fruit and coconut flakes.

This lunch meal needs only 5-6 minutes to prepare. 

Double Grilled Cheese

An updated version for your sandwich has cheese both inside and outside of the bread, to make the absolute best-grilled cheese. To prepare this meal, you need only 5 minutes. 

 

Ingredients:

2 tablespoons butter

2 slices white bread

½ cup shredded extra-sharp Cheddar cheese

Instructions 

Step 1: Melt 1 1/2 tablespoons butter in a nonstick over medium-low heat. Place slices of bread in the skillet on top of the melted butter.

Step 2: Spread about 1/4 cup Cheddar cheese on one slice of bread. Turn over the other slice of bread and put butter-side up.

Step 3: Melt 1/2 tablespoon butter in the skillet next to the sandwich. Flip the sandwich onto the melted butter. Spread remaining cheese on top of the sandwich. 

Shaved-Egg Avocado Toast

You like avocado, and this is another quick avocado with egg recipe you can prepare for your lunch. It's a dream in this super easy sandwich.

Ingredients: 

2 hard-boiled eggs 

2 slices of bread

1 ripe avocado

1 radish, thinly sliced

1 tbsp chopped chives

Pepper and salt

Instructions

Toast the bread. Mash the avocado and add the seasonings you prefer. Put the radish and egg on the toast. Add some salt to taste. 

Chickpea Spinach Salad

Ingredients: 

1 can chickpeas

1 handful spinach

3.5 oz low-fat feta cheese 

1 small handful of raisins

½ tbsp lemon juice 

3 tsp honey

3 tbsp olive oil

1 pinch salt

½ tsp chili flakes 

Instructions

Chop the cheese and add the spinach and chickpeas to a large bowl

Mix the honey, oil, lemon juice, and raisins in a small bowl

Add the salt, cumin, and pepper to the bowl 

Drizzle devilishly delicious dressing over the salad. Mix it and enjoy

Mason-Jar Ramen

Too bored with lunch salad? Liven up your lunch with fun Cup Noodles. 

 

Ingredients:

1 teaspoon bouillon paste

3 tablespoons kimchi

Veggies: corn, carrots, and mushrooms

1 cup of rice noodles

Directions

Put bouillon paste to the bottom of a mason jar, then kimchi. 

Pack your veggies and finally noodles

When eating, pour hot water into the mason jar. Enjoy it!
