Parmesan Garlic Roasted Baby Potatoes

  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp kosher salt
  • 3/4 tsp ground black pepper
  • 2 tbsp olive oil
  • 1 1/2 lbs halved baby potatoes

For dipping, you will need:

  • Greek yogurt or Sour cream
  • Chopped chives or scallions

How To Make

Step 1: Preheat the oven to 400 degrees F (200 degrees C). Mix grated cheese, garlic powder, oregano, paprika, salt, and pepper together in a small bowl with a fork until well combined.

Step 2: Fill a 9x13 glass baking dish halfway with olive oil.  Sprinkle the cheese mixture evenly over the bottom of the pan and arrange potatoes in a single layer above the cheese mixture. Make sure the potatoes are flat and in touch with the cheese layer by pressing down.

Step 3: Bake for 30-40 minutes, or until the cheese has browned and the potatoes are tender. Remove the potatoes from the oven and set aside for 5 minutes to cool.

Using a spatula to carefully remove the potatoes from the pan, be sure to leave the cheese coating on the cut side intact. Place cheese-side up on a serving plate. Serve with sour cream or Greek yogurt, scallions or chives on top.
