280 gram of penne

280 gram of broccoli, cut into florets

25 gram of plain flour

1 tablespoon of wholegrain mustard

Directions

Step 1: Cook the pasta, add the broccoli at the final 4-5 mins and cook until it is tender. Drain well, and then heat the grill.

Step 2: In a saucepan, melt the butter and stir in flour in 1 minute. Then add the milk, stirring well until it is smooth. Bring to the boil, stirring, then simmer for 2 minutes, half the cheese and season before stirring in the mustard, half the cheese and seasoning.

Step 3: Combine the pasta and broccoli into the sauce and spoon into a dish. Scatter over the remaining cheese and put it under a hot grill for at least 3 minutes until it is golden and bubbling.

Fettuccine Alfredo

Ingredients

227 gram of tub clotted cream

Directions

Step 1: Stir the clotted cream, butter and cornflour over a low heat. Then bring it to a low simmer in a medium saucepan . Turn off the heat and keep it warm.

Step 2: Meanwhile, in a small bowl put the cheese and nutmeg and add a pinch of black pepper, then stir everything together.

Step 3: Bring pasta to a boil in at least 3 minutes. When it is done, scoop some of the cooking water into a mug and drain the pasta.

Step 4: Put the pasta to the pan with the clotted cream mixture, then sprinkle over the cheese. Gently fold everything together over a low heat with a rubber spatula. When blended, splash in 3 tablespoons of the cooking water. The pasta will look a bit sloppy at first: keep stirring until the water is absorbed and the sauce is glossy. Remember to check the seasoning before transferring to heated bowls.

Directions

Step 1: Bring the pasta to a boil for about 10 mins. Meanwhile, combine the avocado, tomatoes, coriander, onion and chilli together in a medium bowl, add lime juice and zest and mix well.

Step 2: Drain the pasta, toss into the bowl and blend well. Serve immediately while still warm, or cold.
